Aubergine Dip
I had an aubergine lying in the fridge for a week, and the frustration was building—there never seemed to be a good time to cook that damn aubergine, so I blended it.
Aubergine Dip
1 aubergine
2 tbsp feta
2 tbsp olive oil
Lots of salt
A handful of walnuts
Super lazy, super simple dip that’s absolutely amazing. Top it with crispy chickpeas, baked tomatoes, or just enjoy it as a good spread to have in the fridge.
This recipe makes a small jar, I would double it next time for sure.
