Spiced-Up Apple Jam Recipe

Winter is the season of preserving but also jamming! I took the last of the garden apples and turned them into a super jam packed with nourishment and immunity-boosting spices. It’s a taste of the holiday season in every spoonful, and it’s here to help build up some resilience for the colder months ahead.

Ingredients:

  • 5 medium apples, chopped

  • 1/4 teaspoon grated nutmeg

  • 1-2 star anise pods

  • 1 tablespoon grated fresh ginger

  • Juice of 1 lemon

  • 1/2 teaspoon allspice or 1 tsp whole

  • 1 teaspoon cinnamon or a whole one

  • 2-3 tablespoons honey (or to taste)

Prepare the Apples:

  1. Chop the apples into small pieces.

  2. In a medium-sized pot, add the chopped apples and a splash of water to prevent sticking.

  3. Stir in the grated nutmeg, star anise, grated ginger, lemon juice, allspice, and cinnamon.

  4. Cook on medium heat, stirring occasionally, until the apples begin to soften.

  5. Mix well, allowing the spices to infuse as the apples continue to cook.

  6. Stir in the honey, adjusting to your desired sweetness.

  7. Reduce the heat to low and simmer until the jam thickens to your liking, about 10-15 minutes. Stir occasionally.

  8. Remove the star anise pods (or if you're lazy like me, eat around them) and transfer the jam into sterilized jars (rinse with boiling water).

  9. Seal tightly and allow to cool before refrigerating.
