Chicken And Potatoes

So yesterday, I was in a bit of a rush, came home craving a warm meal, and threw something together. Turns out, it was the best thing I ate all week! Mind you, it didn’t take the 10 minutes I had hoped for—it ended up being 30—but it was so worth it. Let’s call it Chicken and Potatoes.

Chicken and Potatoes Recipe

Ingredients:

  • Chicken – A whole chicken or wings and drumsticks

  • Potatoes – (Kokkenhaven has the most incredible potatoes right now!) I used a mix of different kinds for variety

  • Lemon slices

  • The last green tomatoes from the garden

  • Rosemary

  • A handful of kale, finely chopped

  • Olives

  • Olive oil

  • Fennel seeds

  • Salt and pepper

Optional Additions:

  • Leeks or onions (would be a great touch, but any veggies work)

Instructions:

  1. Preheat the oven to 200°C (or 400°F).

  2. Combine all the ingredients in a baking dish.

  3. Drizzle generously with olive oil, and season with fennel seeds, salt, and pepper.

  4. Mix everything together to ensure the flavors are evenly distributed.

  5. Roast in the oven for about 30-40 minutes, or until the chicken is golden and cooked through and the potatoes are tender.

Notes:

  • This combination hit the sweet spot, but feel free to experiment with other veggies.

  • Serve warm and enjoy the simple, comforting flavors!
