Chocolate Mousse (3 ingredients - chocolate, silken tofu and dates)
This is an absolute favorite recipe of mine, it takes just a second to make and is so yummy. It’s high in protein, magnesium, and fiber. Whenever I make it, it never lasts long in the fridge. It’s great on its own with bee pollen and sea salt, but I also love adding a scoop to my chia or yogurt bowl in the mornings, or even using it as a spread on toast.
Ingredients:
Chocolate Mousse
This one’s smooth, rich, high in protein and super simple.
1 block of silken tofu
1 bar of dark chocolate (85% or higher)
A few soft dates (adjust to your sweetness preference)
Optional - Juice of half to one orange (start with half and adjust based on texture)
Optional - Zest of the orange
A pinch of sea salt
Toppings:
A drizzle of good olive oil
Flaky salt
Instructions:
Melt the chocolate gently.
In a blender, combine the tofu, melted chocolate, dates, (orange juice + zest if adding) and sea salt. Blend until completely smooth and silky.
Taste and adjust sweetness or citrus if needed.
Chill for a few hours to set a bit - I never do this step :)
Before serving, top with olive oil and a sprinkle of flaky salt.
