Fava (broad bean paste)

It’s a perfect kitchen staple. I’ve had fava in Greece too, but it doesn’t come close to the way I like it, and I have to say, that’s the Turkish way. :-)

Fava the Turkish way:

Ingredients:

  • 500g dried broad beans

  • 2 onions, coarsely chopped

  • ½ cup olive oil

  • Salt

  • Water (enough to cover the beans by 2 finger-widths)

  • Optional Toppings: Fresh dill, red onion, and olive oil for serving

Instructions:

  • Soak the broad beans overnight.

  • Add all ingredients to a pot and cover with water. Cook until water is absorbed.

  • Blend until smooth.

  • Spread into a dish, refrigerate until set.

  • Serve with fresh dill, red onion, and olive oil.

I like to use it as a spread or scoop some on top or a salad or bowl for a little extra protein. enjoy!
