Moms Cake
Here’s the cake that Baka de Busk got me dreaming of. I am not changing a thing and giving you the original recipe with options to play around with. Personally, I would experiment with the oil, maybe swapping it for coconut, olive, or butter. For the sugar, you could try using coconut sugar, agave, or honey. Have fun!
Banana-Carrot Cake
Ingredients:
150 g of flour (special vete mjöl)
1 teaspoon of baking powder
½ teaspoon of baking soda
1 Tablespoon of cinnamon
½ teaspoon of salt
150 g of Demerara sugar (Råsocker)
2 eggs
5 Tablespoon of corn oil
1 banana
2½ dl (1 cup) of grated carrots
Icing:
3 Tablespoon of cream cheese
½ teaspoon of vanilla
2 Tablespoon of soft butter
250 g of icing sugar
Mix all the dry ingredients together.
Then, add the eggs, the oil and the mashed bananas. At last, turn in the grated carrots.
Bake in a 20 cm baking tray for 40 minutes at 180°C.
In the meantime, beat together all the ingredients for the icing, to a smooth consistency.
